We left the coast with the sun shining and headed to the mountains. This time we intended to visit the Bussaco National Forest. . Benedictine monks first established a hermitage in the midst of the forest in the 6th century. However it was the Carmelite monks who settled here in the 17th century that built the walls round the forest and introduced new varieties of trees from all over the world. We came for the nature and were astounded by the water. We knew there were thermal baths here, but what we did not know is that mineral water bubbles up from the earth and flows out a myriad of fountains - right in the center of town. Some of the best mineral water we have ever tasted. A constant flow of locals were filling up a myriad of 5 gallon jugs. And then our Pensao owner tells us they pump the same water through the taps in every house. Simply astouding. So with our bottles full of mineral water, off we go to Bucacao (pronounced...
