Tom and I have been married for forty four years and I have heard about his Mom's chicken since year one. For some reason Mom never made this chicken dish when we were invited to dinner. She made other wonderful favorite dishes like stew and pot roast so I never asked her to make the chicken. Well tonight Tom's sister tried to duplicate " Mom's Chicken". Tom and Jim (his brother) said it was just like Mom's. Mary thought so too. I wouldn't know but all I can say is it was tasty, tender, and juicy.

The chicken parts were lightly dusted in flour and seared in a dollop of bacon fat in a cast iron skillet (Mom always used bacon fat and a cast iron skillet). Nowadays we may not cook that way but remember Mary was trying to recreate a memory. After the chicken was browned, Mary deglazed the pan with chicken broth , put the chicken back in the skillet, covered it, and let it simmer until the juices ran clear. It was so moist and tender and the juice added such flavor. We raised our wine glasses and toasted Mary and Mom!

My niece, Regina, surprised us by showing up this afternoon. Always enjoy her company. . She is a great gal and lots of fun to have around. At a garage sale a while back we bought some old 78 and 33 records for Regina's husband Michael. Well we finally got to deliver them to her. We actually played three of them and they are terrific. One was 25 years of Capitol Records ( Nat King Cole, Peggy Lee, Kay Starr, Dean Martin, etc) . The second was Songs of WW11, and the third was Rosemary Clooney Sings your favorite Country Hits in STEREO! What a hoot!

Tom and Jim tried their hand at fishing today but they didn't catch anything. Thank goodness we don't depend on them for supper! While they were fishing Mary and I went to the fabric store and then to a couple of bakeries. We managed to get a nice assortment of sweets for dessert. All in all, a wonderful day where lots of old memories were revisited and some new ones made.
