Persimmon scones - soooo good!


(Elena Writing) While at Costco in Bakersfield last Saturday, we watched a demo of the Vita-Mix, a heavy duty blender. I’ve wanted one for the past couple years but couldn’t convince Ron. He must’ve been so impressed that he agreed we should buy one. Last night I made a mixed fruit sorbet in less than 30 seconds and, needless to say, it was yummy! I’m looking forward to using the Vita-Mix to make all sorts of other dishes using fresh fruits and vegetables.

This morning Ron wanted waffles topped with strawberries so that’s what I made for breakfast…is he spoiled or what! Later we went to Grant Grove Village to catch up on our email and computer work. There was a problem with the WiFi going off the air for a short while but soon was operable again. By the time we got done using our computers, it was early afternoon and too late to proceed with our original plans for the day.

We returned to the campground and relaxed the remainder of the day. I baked a batch of persimmon scones and Ron did some chores. Later he built a fire so I could heat up some leftover chicken and corn tortillas. I made an avocado salad to compliment the chicken tacos. We topped off dinner with strawberry longcakes for dessert and played cards in the evening.
